I gave myself a little time off with the arrival of our little baby and am now trying to catch up on life and blogging etc. Things are a little crazy around here still and we are all a little sleep deprived so if this post isn't written or thought out too carefully I hope you will humor me. :)
White Chicken Tortilla Soup
(ingredients are in BOLD)
2 chicken breast (or 2 cans of canned chicken breast)
½ teaspoon cumin
3 ½ cups water
½ teaspoon lemon pepper
4 chicken bouillon cubes
Simmer the ingredients above for 20 minutes, then remove chicken, cut into small pieces, and then put back in water. (if using the canned chicken you don’t need to simmer this long and you can skip cutting the chicken up into pieces)
1 large onion (I use one bag of frozen onions)
2 gloves garlic (I use the already chopped garlic in a jar)
Sauté above ingredients and then add onions to the pot with the broth and chicken.
Add to the pot:
1 package frozen white corn
½ can chopped green chilis
1 teaspoon cumin
1 tablespoon worstchesire sauce
3 cans great northern beans
1 tablespoon lime juice
1 teaspoon sugar
Continue to let simmer until the desired consistency and beans are cooked.
Serve with:
Tortilla chips
Chopped green onions
Sour cream
Chopped tomatoes
Grated cheese
Avocado
This soup is delicious! It takes a little extra effort...what with all of the chopping that has to be done, but it is SO worth it in the end.
We have a new addiction around here and wow, is it good! We all have a hard time staying away from it. Jackson asks everyday when we get to have smoothies. These are SO fresh and delicious. I am sure you could put your own spin on this smoothie (since this is just something we came up with) and make it more to your liking, but I thought we should share our current addiction.
Berry Smoothie
2 Cups of Frozen Mixed Berries
2 Cups of Orange Juice
1 1/2 Cups of Vanilla Ice Cream
1 Cup of Raspberry or Strawberry Yogurt
1 Whole Banana
1 tsp. of Vanilla
**About 4 half glass servings (the size glass that you see Jackson drinking out of in the picture)

I don't know about you, but I am beginning to get bored by the schedule and want to change things up a bit. I am thinking that I'll still blog about some of our favorite things, but also add some new things into the mix. Just as an FYI.
In Apron news....
I haven't forgotten about the aprons and have been dying to announce them, but due to some unforeseen events in Anna's life (the photographer), we have had to delay the aprons a little. As soon as she is ready and gets up and started again than so will we, but for now, we are on hold.

I have been craving this salad lately and have way over done it. I really crave sour flavors while I am pregnant and seriously this salad is just perfect. My mom introduced me to this salad and I think I have introduced it to a few others who are now addicted too. :)
Romaine Salad
Dressing:
1/3 to 1⁄2 c. vegetable oil
Juice of 1 lemon (about 1⁄4 c.)
1 to 2 garlic cloves, minced
1⁄2 t. salt
1⁄4 t. pepper
Salad:
1 lb. (2 bunches) mixed lettuce, torn
1/3 lb. bacon (8 strips) cooked and
crumbled, optional
2/3 c. slivered almonds, toasted
1/3 to 1⁄2 c. fresh, grated parmesan cheese
2 c. chopped tomatoes, optional
1 c. (4 oz.) grated Swiss cheese
1 c. Caesar salad croutons, optional
In blender (or tightly closed jar) mix oil, lemon juice, garlic, salt and pepper. Chill. In bowl, toss
remaining ingredients except croutons, pour dressing over salad and toss again. Add croutons
very last, if desired, and serve immediately.
